Place the water and hibiscus in a pan and bring to the boil. Add the sugar (as required) and then simmer for around 45 minutes, stirring occasionally. Strain the mixture in a sieve. The most prestigious and widely spread vernacular is known as Cairene Arabic , being spoken by about 50% of the population, and the second, less prestigious, being Saidi Arabic
